Alcapurria de Yuca

Yuca Fritters


Ingredients

Yuca masa (Yuca dough)

1 1/2 pound of frozen yuca

1 tbs of adobo

1/2 bs of Sazon with culantro y achiote

Yuca Filling

1 pound of ground pork

1 shallot

3 mini bell peppers, chopped small

1 clove garlic minced

2 tbs of sofrito

1 tbs of powdered chicken bouillon

1/2 tbs of Sazon with cilantro and achiote (1 packet)

2 tbs of tomato sauce

1 tsp of adobo Goya

1 tsp of oregano

1/2 tsp of black pepper

1 small potato cut into small pieces

I let the yuca drain the water for 1/2 hour if frozen in colander. Once water is drained, I cut them in half to remove the root, and then add the yuca to the food processor to grate. Once grated place again in the colander and let it drain all the water for another 1/2 hour. Season with adobo and Sazon. Set aside.
