Arroz con Calamares

Rice with Squid


2 tablespoons of vegetable oil

1/4 cup onion, diced

1/2 cup red and yellow bell peppers, diced

2 cloves of garlic, minced

1 or 2 cans of squid fillets

2 cups of medium white rice

4 cups of water

1 tsp of salt

1/4 tsp pepper

1 tsp of adobo seasoning

2 tbsp of sofrito

2 tbsp of tomato sauce

1 packet of sazon with color


Heat the oil at medium high and sauté the sofrito, onions and the peppers until translucent. Add the minced garlic to the pan, when fragrant add the calamari fillets.

Cook for a minute or two, add the rice and sauté for 1 to 2 minutes, then add the water.

Add the tomato sauce, sazon, adobo, salt, and pepper.

Reduce the heat at low and let it simmer for about 30 minutes or until the rice is cooked.

To this delicious rice you can add shrimps, and chicken stock if you like. Enjoy with sweet plantains, any meat of your choice, or salad.
