Avocado Dressing🥑



Avocado, loved by many especially in Puerto Rico. We make sure we have a slice or two or 3. hey! Even the whole avocado in every dish we enjoy daily. We add avocado in our soups, we eat it with rice and beans, some people eat with bread or even alone. It’s a tradition for us to make sure we grab that nice ripe avocado for lunch or dinner.


They are a great source of potassium, high in fiber and even lower your LDL cholesterol. They are very healthy so don’t forget to go grab one before serving dinner tonight.


Here’s a creamy delicious recipe and also easy very easy to make.


Ingredients


1/2 large ripe avocado

1/2 medium lemon

1/4 bunch fresh cilantro

1/4 cup extra-virgin olive oil

1 peeled cloves garlic

Salt and ground black pepper to taste


Instructions


Add avocado into a blender or food processor. Juice of lemon and fresh cilantro with stems and all, but that’s optional.


Add extra-virgin olive oil, 1 minced garlic clove, salt, and pepper. Blend until smooth. If too thick, you can add about 1/4 cup of water but I loved it creamy so I didn’t add water.


Blend until desired consistency. Taste and season with more salt and black pepper. If you like it more lemony go ahead and add more lemon juice.


Add it to pasta, grains, vegetables, tacos or burrito bowls.
