2 lbs beef shanks

1 small onion finely chopped

1-2 tbs of salt

1 tbs of onion powder

2 garlic crushed

2 tbs of vegetable oil

Chile paste

4 guajillo Chile

4 Chile de árbol

2 Romano tomato’s cut into pieces

4 cups of beef or chicken broth

2 cups of water

2 chipotle peppers in adobo sauce

3 garlic cloves

4 bay leaves

1 tsp of Mexican oregano

1 tsp of cumin

1 tsp of chili powder

1 tsp of coriander

1/2 inch of cinnamon

1 tbs of white distilled vinegar
