Brown Rice with Chicken

Brown Rice with Chicken (Arroz Integral junto con Pollo)

5 pieces of boneless chicken cut into cubes

1 cup of Brown Rice

2 cups of chicken broth

1/4 cup of red peppers

1/4 cup of onions

2 tsp of sofrito

2 tbs of tomato sauce

1-2 minced garlic cloves

2 tbs of olive oil

1 pack of Sazon with color

Salt and pepper to taste

Season the cut chicken with salt and pepper (I always add a few drops of lemon in my chicken)

In a pan cook chicken in olive oil until it turns white, set aside.

In the same pan add more olive oil about 2 tbs, then add onions, pepper and sofrito for about 3 minutes then add garlic and cook for another 2 minutes. Add the chicken to the pan, rice, tomato sauce, Sazon, and chicken broth and bring to a boil. Simmer on medium-low until most of the water evaporates and you see the liquid bubbling at the top of the rice line, then reduce heat to low heat and cover.

Cook rice for about 20 minutes covered. Once rice is tender serve with some sweet plantains or Tostones 😍 in this case I fried sweet plantains and added salad on the side.
