Crab Meat Salad
1.5 lbs Imitation crab meat flake style
1/2 small seedless cucumber
1 tbsp of onion
1 cup of shredded red cabbage
3 tbsp of olive oil
2 tbsp of vinegar
1/2 a lemon juice
Salt and Pepper to taste
This is optional since the crab meat is fully cooked. I boil the crab meat in water for 10-15 minutes before using it. The reason I do this, it’s because I find the crab meat kind of tuff.
After boiling the crab meat I chopped it in small pieces. Cut into small pieces the tomato, cucumber, onion, and shredded cabbage. Add everything in a glass container and mix well.
Add the olive oil, vinegar, lemon juice, salt and pepper to taste. Refrigerate for 1 hour.
Serve with spring mix salad, or your favorite side.
