Easy delicious Limber🇵🇷

(Coconut Ice)


As a little girl when I went to my grandmothers house in Puerto Rico, she always had Limber in her freezer. She had all the flavors, orange, chocolate, mango, pineapple, cherry, tamarind, passion fruit, strawberry, and many many more. My favorite of all was the coconut, she made it from scratch but this is an easy version. My grandma used real coconut chunks, different milks, cinnamon sticks, and vanilla beans. Oh what amazing memories those were, I miss her dearly. I’m happy I am able to share this with you, hope you make it and try it. It’s so easy and delicious, your kids will love it. Now, I know you have to be saying “lactose free milk?”🤭 yes! Not only I can’t use regular milk, but the combination of milk, and the sweetness it came out incredibly good. That’s optional but give it try!

Ingredients

1 can of coconut milk https://www.amazon.com/Goya-Foods

1 cup of Goya Coconut Milk Cream of Coconut, 15 oz

1/2 cup of milk

(For this recipe I used lactose free optional, but the taste is incredible you wont regret.)

1 tsp of cinnamon (more for top of icy)

1 tsp of vanilla extract


Mix all milk, vanilla extract, and cinnamon together in a blender until mixture is thoroughly combined.

Pour mixture into 3 oz Disposable Cups. Freeze 8 hours to overnight.
