1 cup all-purpose flour
1/2 cup butter, softened
1/4 cup confectioners' sugar
3 large eggs, room temperature
1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 tsp vanilla extract
1/8 tsp salt
2 tablespoons lemon juice
1 teaspoon grated lemon zest
confectioners' sugar to dust on Lemon Bars
Shortbread Crust: In a bowl, combine the flour, butter and confectioners' sugar. Pat in shortbread crust into an ungreased 8-in. square baking pan (dust flour on hands to avoid the batter from sticking to your hands). Bake at 350° for 20 minutes.
in a small bowl, beat eggs. Add the sugar, flour, baking powder, vanilla extract, lemon juice, zest, salt, and beat until foamy.
Once the crust is done add the filling. Bake for 25 minutes longer or until light golden brown. Cool and dust with confectioners' sugar and cut into bars.
(This recipe came out delicious, buttery, lemony, and not over powering.)
