Mini Potato Balls

Relleno de Papa


6 medium potatoes

2 cups Panko breadcrumbs

2 tsp of cornstarch

1 egg

1 cup of oil for frying

Boil potatoes with salt in water. When potatoes are tender (fork approve) mash then and wait until they are cool (about 1 hour) add 2 tsp of corn starch mix well.

Take about 1 spoonful and flatten it with your hand (It should feel like a paste) in the center add 1 tbs of meat. (Meat recipe in the this page)

Make a ball covering well the meat. Dip in cornstarch, Cover it well. Dip in egg (1 egg) Dip in Panko breadcrumb cover well. Fry in a deep pan (I personally didn’t add a lot of oil) about 1 cup of oil, for 5 minutes each side on medium-high.

Remove and place on paper towel to absorb excess oil.
