Orzo Salad with Salmon
1 cup of orzo
1 can of Salmon
1/2 a seedless cucumber
1 Roma tomato
1/2 tbs white onion
1/2 tbs of mixed red and orange bell pepper
1/2 cup of extra virgin olive oil
Salt and Pepper to taste
Cook the orzo according to package directions using salted water.
In the meantime, clean the salmon by removing the bones and skin. Add the clean salmon in a deep dish or glass bowl with 1/2 the lemon juice.
Once the orzo it’s cooked rinse in cold water, drain. Add the Orzo, diced tomato, cucumbers, onions, and bell peppers together with the Salmon.
Mix everything well and add extra olive oil, 1/2 lemon juice, salt and pepper to taste.
Refrigerate for 1 hour and Enjoy!
(The great thing about this salad, is that you can add shrimps, chicken, or other vegetables if you are not a fan of Salmon)
