Relleno de Platano Maduro

Ingredients


3 sweet plantain

1 cup of flour or more as needed

1 cup of park bread crumps

1 egg

1 tsp of salt for water

Boil plantain (3 cut into small rounds) add salt in the water. When plantains are tender (fork approve) mash them and wait until they are cool (about 1/2 hour).

Take about 1 spoonful and flatten it with your hand (It should feel like a paste) in the center add 1 tbs of meat.


Make a ball covering well the meat. Dip in flour, coat well. Dip in egg then dip in Panko breadcrumb, coat well.


Fry in a deep pan (I personally didn’t add a lot of oil) about 1 cup of oil, and fry until golden brown. Place on paper towel to absorbs excess grease.

You can enjoy this with rice and beans, or alone like an appetizer.
