Sancocho

Quick and easy sancocho


I decided to make this recipe my way and with a twist, sancocho boricua, my easy fast version. The original recipe comes with pieces of meat (chicken, beef and Pork) but I decided to make it with meatballs. Chicken meatballs, beef meatballs and pork meatballs (only seasoned with salt, pepper and oregano) yes! I decided to change it up a little. It came out amazing and very flavorful.


Roots that I used in this recipe



1 White sweet potato (cut into cubes)

1 taro root (cut into cubes)

1 white yam (cut into cubes)

3 mini frozen corns cut into half

1/4 pumpkin

2 green plantains (grated and made into small balls)


1 package ground chicken

1 package of ground pork and 1 package of ground beef


Sancocho is made in very different version, different recipes and from different countries. I hope you try this recipe and share photos.


Chicken, pork and beef meatballs (seasoned with salt, pepper and oregano) Brown the meatballs in 1 tsp of olive oil. Just brown them in each side for 3-4 minutes. Don’t over cook them, set aside. In a pot with 1 tsp of olive oil cook 1/2 red pepper 1/2 yellow pepper and 3 tbs of onion for 3 minutes. Add 2 garlic cloves, Add 2 tbs of sofrito, 1 can of tomato sauce. Add the meatballs, Simmer for 5 minutes, add 5 cups of beef broth. Simmer for 1/2 hour. Add root vegetables (ñame, batata blanca, yautia, corn and calabaza) let it simmer for 45 minutes. Add bolita de plátanos (green plantain balls) recipe in this page. Simmer for another hour or until roots are tender. Add salt and pepper to taste! Serve with white rice.
