Spicy Quinoa with Shrimps



1 cup of quinoa

2 cups of chicken or vegetable broth

1/2 tbs of olive oil

1/4 cup of chopped onions

1 garlic clove

Salt and pepper to taste

1/2 tbs of parsley

1/2 tbs cayenne pepper

1/2 tbs of chili powder


1/2 pound of shrimps

1 garlic clove

1/2 tbs chili powder

1/2 tbs of olive oil

1/2 lemon juice

1/2 tbs Fresh or dry parsley


In a fine-meshed strainer, rinse the quinoa under cold running water, please rinse well.

Heat the olive oil in a pan, add onion and garlic cook for 3 minutes then add quinoa, broth, cayenne pepper, chili powder, salt and pepper. Bring to a boil uncovered. When it starts to boil, reduce the heat to the lowest setting, cover, and simmer for 20 minutes, or until the water is absorbed, and the quinoa is cooked and tender. Remove from heat, add the parsley, and mix well.


In another pan heat olive oil and add shrimps, cook for a few minutes and add garlic, cayenne pepper, chili powder, salt and pepper.


Add the shrimps to the quinoa and mix well, with fresh parsley and lemon juice.
