Vegetable Mofongo with Coconut Curry Fish


Mofongo


2 plantains cut into small pieces

1/4 cup of onion

1/4 cup of peppers

1 tsp of olive oil

2-3 garlic cloves

2 tbs of olive oil

Salt and pepper to taste


Fish


2-3 pieces of flounder fish

1 can of coconut milk

1/2 cup of water

2 tbs of tomato sauce

3 tbs of curry powder

1/2 onion

1/2 pepper

2 garlic cloves

Salt and pepper to taste


For the fish I used flounder fillet but you can use any fish of your liking. Heat olive oil and add the onions and peppers for 3 minutes. Add garlic, tomato sauce, coconut milk, water, curry, salt and pepper to taste. Let it simmer for 10 minutes and then add the fish to the sauce. Let it cook for another 5-8 minutes.


For the vegetable mofongo I boiled the plantains with a pinch of salt, and cooked till fork tender. I cooked the onion and peppers in olive oil till tender, in the mortar I added olive oil, garlic, onion, pepper, and plantain. Mash and mold into shape half sphere using either your hands or a container. Serve with the coconut curry fish.
